LLooking for that perfect, no-mess snack? We’ve got you covered with our easy Olive, Tomato & Rosemary Focaccia recipe! Other than a sheet of our eco-friendly baking paper, you’ll also need the following ingredients (serves 6-8 pieces):

  • 500 g flour
  • 320 ml warm water
  • 50 ml olive oil, plus a little extra
  • 14 g dried yeast
  • 80 g black olives without pits, sliced
  • 150 g sun-dried tomatoes
  • 2-3 rosemary sprigs, leaves only
  • Salt, sea salt, fresh ground black pepper

An easy no-mess snack with eco-friendly baking paper

FFirst, mix flour and yeast in a bowl, along with a few sprinkles of salt. Create a hole in the center of the yeast and flour mix using your fingers. In another bowl, combine the warm water with the olive oil, then slowly pour this mixture into the hole. Thoroughly mix the wet and dry ingredients, then move the dough onto a flat surface covered with flour. Using your hands, knead the dough mixture for about 10 minutes until smooth, then form into a ball.

Return the dough to the bowl and cover loosely with a tea towel. Leave the mixture to rise for 30-60 minutes, or until it doubles in size. Line in an oven tray with baking paper. Cover the paper with a light drizzle of olive oil and grease the tips of your fingers with the oil as well. Once the dough has risen, place it in the middle of the baking tray. Carefully spread and shape by hand to the edges of the tray. Distribute the olives and sun-dried tomatoes evenly across the base, pushing them firmly with the tips of your fingers so they are half embedded in the dough.

Preheat the oven to 200 degrees Celsius or 392 degrees Fahrenheit. Sprinkle sea salt and rosemary sprigs across the surface and place the tray into the middle rack of the oven. Leave to bake for approximately 20-30 minutes until golden.

OOnce cool, slice the focaccia neatly into individual squares and there you have it! The perfect snack to eat on-the-go or serve at parties. For an on-the-go option, wrap each slice in parchment paper to catch any drips of olive oil that may seep out from the bread.
